Water is a byproduct of combustion. I'm betting the old engine oil is picking up moisture as the car runs. The new oil doesn't have this moisture and likely doesn't mix with the new oil. Another possibility is that all the contaminants in the old oil make it more dense than the new oil. This is why the new oil is sitting on top of the old oil as it drains out.
Because the old oil is petroleum oil normal motor oil and the new oil is synthetic and yes they will not mix and will stay separated, this is why they say do not mix the 2 with each other. Not Rocket Science, think ya owe this person a new engine

The older oil is heavier
Old oil was mixed with coolant and you never started it to mix them 🤷🏻♂️
Wouldn't that be normal if the engine wasn't run after adding the new oil ?
